More Horrible Advice for Diabetics

images This is absolutely ABSURD!!  Because ONE food can help lower the glucose level in the body, does NOT mean that it is a good idea to follow this ridiculous advice!.  SEVEN cups a day would severely lower the appetite, harm the lining of the stomach, lead to inability to sleep.  Now don’t get me wrong, I am fully cognizant of coffees benefits, it’s a great addition to the morning as long as it is taken in moderation (one to two cups)…but controlling or even reversing diabetes is all about eating correctly, nourishing the body, repairing the damage manifested my eating too may carbs…NOT using a LOT of coffee to treat symptoms!

I LOVE Breakfast Frittatas!

My clients tell me consistently that they have no time to make breakfast.  But breakfast sets the tone and energy, for the whole day!  Skip and you cannot catch up on meeting your nutrient needs for that day.

I added Breakfast Frittatas’ to the Meal Delivery Service and over half of the clients order them each week.  I wanted to share the recipe with you.

10 whole organic eggs
1 large green pepper- cut in medium matchsticks
1 large Spanish onions- cut in half moons
1 large red pepper, cut in medium matchsticks
2 large organic baking potatoes- grated
3/4 pound mushrooms- sliced
2 Tablespoons dill
salt and pepper to taste
3 Tablespoons butter
Bacon or sausage, cooked, is optional.

Steam potatoes until done, they will look translucent.

Meanwhile heat butter, then sauté onions until caramelized, add peppers and mushrooms.  Season with salt and pepper.

Prepare spring form pan as you would for a cheesecake; place foil over flat bottom and then put ring in place.  Wrap foil up outside edges and then place another layer of foil.  This will keep the eggs from leaking out the bottom of the pan until they begin setting up as they heat.

Season potatoes with salt and pepper and place in bottom of spring form pan.  Add veggies next, then any meat such as bacon, sausage, etc. 

Scramble eggs with salt, pepper and dill.  Bake at 370 for about 30 minutes, until eggs are set.

Butternut Squash and Cannellini Soup with Bacon

Butternut Squash and Cannellini Bean Soup with Bacon 2

Serves 4

6 slices bacon
1 Tablespoon Butter
1 cup diced onions
1/2 teaspoon freshly minced garlic
2 cups chicken stock (not canned or boxed)
1 medium butternut squash- peeled, cut in 1 inch cubes
2 15.5 ou8nce cans cannellini beans- do not drain
1 cup diced tomatoes
1 teaspoon rosemary
salt and pepper

1)  Sauté bacon in heavy large pot over medium heat until crisp, about 4 minutes.

2)  Add onion to drippings and let sauté until caramelized, about 30 minutes.  Add garlic, sauté another 3 to 4 minutes.

3)  Add chicken broth; bring to boil. Stir in butternut squash, 1 can cannellini with liquid, tomatoes, and fresh rosemary.

4)  Puree remaining 2 cans cannellini with liquid in processor until smooth; add to soup. Cover and simmer until butternut squash is tender and flavors blend, about 15 minutes. Season soup with salt and pepper.

 


Gluten Free Potato Latkes

I love latkes, crispy little potato cakes, fried in organic beef fat.  The key to crispy here is to use only beef fat!  Any other fat is not going to make them as crispy.

2 medium baking potatoes
2 medium eggs
3/4 cup sweet rice flour   
salt and pepper
organic and/or grass-fed beef fat
grated onions

1)  Lightly salt the potatoes and onions after grating them in a food processor or with a box grater and let them drain a bit in a mesh colander.

2)  Heat the beef fat to medium heat, the fat should be sizzling before you add the latkes.

3)  Mix drained potatoes and onion with flour, salt and pepper, garlic if desired..and let sit while fat is heating, about 10 minutes.

4)  Form into little 3 inch patties, rather flat on both sides.  Let them slide off of the ends of your fingers into the fat.

5) You will be able to tell when they are ready to start watching to turn because the you will see the edges browning nicely.  Carefully flip and continue to brown on other side.

6) Drain well either on paper or a drying rack, them serve with ketchup, rice sour cream..or applesauce.

 


Healing From Cancer- Health is all about Cause and Effect

As I was reading the headlines this morning reporting that they think shark “may target breast cancer” it hit me that every few months we hear about something that “might” help us fight cancer.

We are looking at this wrong.  PREVENTING cancer is easy, and healing from cancer is possible.  There is NO one food, or one supplement that will help us heal.  And we know that the medical community is clueless when it comes to health.

To prevent, and heal, cancer we need a healthy immune system, and that means truly meeting your nutrient needs as well as detoxing the body, exercise and managing stress.

Let’s look at these components of health;

Nutrition-  This is the single biggest factor is preventing all diseases, as well as cancer. The issue is that Americans no longer are aware of how to eat, how to get all the nutrients they need.  We are beginning to feel as though being overweight is normal, getting fat is inevitable, that getting sick, having allergies..are all normal.

These conditions are NOT normal.  If you are getting sick often, if you have cancer, if you have low energy, if you are even 10 pounds overweight you are MALNOURISHED!

We have to meet our nutrient needs for our bodies to run efficiently. Think of it this way; if you attempt to drive your car without the proper fuel, it doesn’t work well.  It is no different for our bodies.

Americans began moving away from traditional diets in the sixties, we became terrified of red meat and saturated fats.  At the time there was ample reason to be scared of those foods..the only choices we had were feed lot meat filled with antibiotics, steroids, hormones…stuff we were better off without.  But now all that has changed; we have organic foods and meats that are now very close in price as the conventional foods.

The results were that more and more of us switched to a vegetarian diet, however that way of eating does not meet our nutrient needs and leads to deficiencies.  And because we lowered our protein and fats intake that in turn drove up our carbohydrate intake…leading to weight gain, cancer, strokes, heart disease, higher infant mortality, childhood obesity…I could go on and on!

Exercise- One of the key preventive measures in returning the body to health is exercise.  There are many many reasons to be in motion, but the main reason in preventing cancer is that cancer does not grow well in a body which is oxygenated well.

Stress Reduction- Our lives have gotten out of control; too much rushing around, finances, information overload…and we all know about the extreme damage that cortisol does to our bodies;

  • Impaired cognitive performance
  • Suppressed thyroid function
  • Blood sugar imbalances such as hyperglycemia
  • Decreased bone density
  • Decrease in muscle tissue
  • Higher blood pressure
  • Lowered immunity and inflammatory responses in the body, slowed wound healing, and other health consequences
  • Increased abdominal fat, which is associated with a greater amount of health problems than fat deposited in other areas of the body. Some of the health problems associated with increased stomach fat are heart attacks, strokes, the development of metabolic syndrome, higher levels of “bad” cholesterol (LDL) and lower levels of “good” cholesterol (HDL), which can lead to other health problems.

This article is the first in a series of three, in each article I will be expanding these topics and talking about HOW to heal, what foods are crucial, what a perfect day (nutrition-wise) looks like and the many modalities to healing.  We will look at how to use THC therapy, juicing, yoga, walking, saturated fats, detoxing, Hydrogen peroxide therapy…to heal.


Protocol for Gut Support During and After a Round of Antibiotics

Antibiotics are truly a wonder of modern medicine.

Beginning with the discovery of penicillin by Alexander Fleming in 1928, the pure magic of antibiotics with their rapid resolution of bacterial infections of all kinds caused many in the medical profession to become completely enamored with the drug based approach to illness. By 1940, antibiotics had come into widespread use causing both doctors and people to gradually forget about tried and true techniques for preventing illness such as the age old remedy cod liver oil.

This change in the medical paradigm has led in recent decades to abuse of these magical meds and the growing threat of antibiotic resistant bacterial strains. It has also caused in an epidemic of people with compromised gut function due to an imbalanced intestinal environment resulting from excessive exposure to antibiotics via industrially produced foods, medicine, and more recently, groundwater contamination.

Study Finds That Raw Garlic Cuts Lung Cancer Risk In Half

A new study out of China has determined that people who consume raw garlic as a regular diet were 44% less likely to suffer from lung cancer.

Researchers at the Jiangsu Provincial Centre for Disease Control surveyed the participants on their diet and lifestyle habits, including garlic consumption and whether or not they were smokers. Even among those who smoked, the garlic consumption reduced lung cancer risk by 30%. The study was published in the Journal Cancer Prevention research.

Researchers believe that the benefits of raw garlic may be linked to a chemical called allicin, which is released once the garlic is either smashed or diced. This chemical is rumoured to not only reduce inflammation but also decrease the damage from free radicals to the body’s cells. The study used  the data of approximately 4,500 lung cancer patients and 4,500 healthy adults from 2003 to 2010. If you are looking to provide your body with a healthier environment, this is just one of the many health benefits raw garlic can provide you with. It’s time for human beings to make a change, and one of those changes includes the way we eat.

Cancer incidence rates continue to rise every year, according to the American Cancer Society. Males have approximately a 1 in 2 chance of developing cancer within their lifetime, and a 1 in 4 chance of dying from it. Women have a 1 in 3 chance of developing it and a 1 in 5 risk of dying from it.  We continue to search for a cure, while we forget to acknowledge the cause. We choose to surround ourselves with a bombardment of chemicals, GMOs, artificial sweeteners, harmful cosmetics, hazardous household products and more. Is it really a mystery that cancer rates continue to increase? Our eating habits as a whole tend to be extremely poor and we continue to ignore the amount of research that can render cancer lifeless.

I am definitely open to the idea that certain cures are suppressed, and Kimberly Carter Gamble makes a good point in the video on that exact idea. At the end of the day it all comes down to making better choices in your life.

Spinach Paneer- Dairy Free!!

Spinach Paneer

1 Tablespoon ghee
1 Tablespoon minced ginger
1 Tablespoon minced garlic
1/8 teaspoon cayenne
1/3 teaspoon jalapeno- minced
1/2 teaspoon cumin
1 teaspoon garam masala
1/3 teaspoon cardoman
1/3 teaspoon tumeric
3 Tablespoons beef or chicken stock
1 pound spinach
1/2 cup coconut milk yogurt- see recipe HERE.

1)  Sauté ginger, cayenne, jalapeno until softened and aromatic.  Add garlic and sauté until slightly browned…about 3 to 4 minutes.

2)  Add stock and simmer a few minutes.  Add spinach, cover and let cook a few minutes, then stir to mix onions and spices well with spinach.

3)  Cover again alt let cook a minute or two, until spinach is wilted and bright green.

4)  Remove from heat and stir in yogurt a little at a time to keep it from curdling.  Serve immediately.
