Gluten and Lactose Free Belgian waffles

This light crisp waffle has a strong vanilla flavor. They also freeze well. I use a Breville Waffle Maker.
Makes 6 to 8 waffles.
2/3 cup rice flour
1/3 cup tapioca flour
1/2 cup tapioca flour
1/2 cup potato starch
1/2 tsp salt
5 tsp baking powder
1 T. sugar
1 egg plus 3 egg whites
1/4 cup butter
1-1/2 cups coconut or almond milk
2-1/2 tsp vanilla
Mix together the dry ingredients, set aside.
Put the egg yolk in a bowl and beat together with the melted butter, milk and vanilla. Stir in the dry ingredients until blended.
Beat the 4 egg whites until soft peaks form and fold them gently into the batter. Do not over-beat.
Cook in a waffle maker or iron.
